  • 1 cup (2 sticks) unsalted butter
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • One teaspoon of pure vanilla extract
  • 2 cups semisweet chocolate chips
  • 1 cup chopped pecans or almonds (optional)
  • One tablespoon of ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup water
  • 1 cup light brown sugar
  • 1 cup white granulated sugar
  • 1/2 teaspoon cream of tartar


  1. Prepare a baking sheet by lining it with parchment paper or a silicone baking mat. Set aside.
  2. Melt the butter in a large, heavy-bottomed saucepan over medium heat. Once melted, add the granulated sugar, salt, vanilla extract, ground cinnamon, and ground nutmeg. Stir continuously until the mixture is well combined and begins to bubble.
  3. Slowly pour in the water while stirring constantly to prevent the mixture from seizing. Continue to cook the mixture, stirring frequently, until it reaches a temperature of 300°F (150°C) on a candy thermometer, also known as the hard crack stage. This should take approximately 10-15 minutes.
  4. Once the toffee reaches the desired temperature, remove the saucepan from the heat and carefully pour the hot toffee onto the prepared baking sheet. Use a spatula to spread it out evenly to your desired thickness.
  5. In a separate small saucepan, combine the brown sugar, white granulated sugar, and cream of tartar over medium heat. Stir until the sugars are dissolved and the mixture begins to bubble.
  6. Continue to cook the sugar mixture, stirring occasionally, until it reaches 270°F (132°C) on a candy thermometer, known as the soft crack stage. This should take approximately 10-12 minutes.
  7. Once the sugar mixture reaches the soft crack stage, pour it over the toffee layer on the baking sheet. Use a spatula to spread it out evenly.
  8. While the toffee is still hot, sprinkle the semisweet chocolate chips evenly. Allow the heat from the toffee to melt the chocolate chips for a few minutes, then use a spatula to spread the melted chocolate evenly over the toffee layer.
  9. If desired, sprinkle chopped pecans or almonds over the melted chocolate layer for added flavor and texture.
  10. Allow the Churro Toffee to cool completely at room temperature, or place it in the refrigerator for faster cooling. Once completely cooled and set, break the toffee into bite-sized pieces.
